Winemaking is a technological process of making wine from grapes, as well as from other fruits and berries.

In Russia, grapes are grown in the Crimea, Krasnodar and Stavropol Krais, in the Caucasus, and in Astrakhan, Volgograd and Saratov Oblasts. Industrial viticulture is most developed in the North Caucasus and Rostov Oblast. The Don Region is the most northern zone of grape cultivation and the production of autochthonous (aboriginal) wines from it. It is distinguished by its covering viticulture, which is more complicated, more costly and requires long investments. At the same time, climatic conditions contribute to the growth of unique grape varieties, and wines made from them are recognized as the best in Russia. One of the popular varieties is Floral, a technical grape variety with increased resistance to disease and frost. It was bred at the All-Russian Research Institute of Viticulture and Winemaking named after Ya. I. Potapenko. The color of the fruit is amber, the flesh is quite juicy, the taste is muscat.

Bulgaria is a country of winemakers, it is among the top twenty countries with the largest vineyard area. Climatic conditions allow to grow the grapes of the most popular wine varieties in the world. There are 5 largest wine regions - the Danube Plain, the Thracian Lowland, the Valley of Roses, the Valley of the River Struma and the Black Sea Coast. A popular variety is Rubin Kaylyshki, a red technical grape obtained at the Institute of Viticulture and Winemaking of the city of Pleven. It grows well on hilly terrain in fairly deep and rich soils, it is used to produce high-quality semi-sweet and sweet wines. They are distinguished by a rich dark red color, have a harmonious taste with hints of blueberry, blackberry and violet.
